My final build ... for now anyway .. still might swap out the shock for the Fox Performance, but will stick with the stock one for the moment as so far I'm really happy with it.
Disks/Rotors .... went back to stock, they're heavier than the ice-tech but seem to work well.
Rear caliper - stock Tektro. Front TRP. Levers - TRP. The calipers performance wise and feel wise are pretty similar so you only really need a lever swap if you want more power.
Fork - 170mm 29" Fox 38 Performance GRIP E-bike spec. The Grip damper's slightly better for lighter riders and the e-bike spec means the rest of the damping is also slightly softer.
I think pretty much everything else I've put back to stock. The bars and stem feel good and aren't heavy.
Mudguards have come off the Jam2 (same bolt on RRP fits the Fox 38 with a different angle spacer).
Loam Lab grips and bar ends/tree/rock sliders with a granite tool in one side (From Kenevo).
Stock grips are super light - 88g for 2 ! (Spesh 110g, Raceface 146g, Loamlabs with ends 170g, 200g with Granite as it replaces the LL compression clamps).
One up pump and tools, from the Jam - 287g with mud.
Pricing (it's supposed to be "Discount bike which can do anything the others do - as well as or better") :
Bike €2700 (Bikester.fr with day 1 pricing error)
Forks Fox 38 €450 (RCZ)
Star Nut/Crown Race €5.30 (bike shop).
Brakes TRP full set €90 (Bike Discount.de)
Pedals €35ish ? (well, free, it was a voucher) Nukeproof, they're a bit crap really - don't spin freely, need to strip them.
Bolt Check at Bike shop (Warranty by Bikester).
Wheel Truing - free at bikeshop.
Snag points :
Still get some random chain slip of some variety and can't work out when or why, it's rare, but annoying !
Bike shop re-aligned the rear wheel, it had been built offset to the none drive side, I'd already seen it but decided it was built offset for some reason !

They didn't think so.
Charging - Most of the time, plug into the mains and then into the bike and it charges. Sometimes you can do it the other way, but need to rotate the charge plug so I might just have a crappy connection.
Tubeless - They seem to take a while before they stop very slowly bleeding pressure - This may also be the valves at the incorrect tension or just ineptitude from the person who did it....
Looks like the gear cable might rub on the seatstay over time, so that want's some tape on it :
