Looking into putting the new NX Eagle groupset on to my Vitus, which currently runs a a Shimano XT/Deore mix. What i am unsure of is if the Shimano Chainring is fine to work with the Sram Eagle tech? The cassette, derailed and shifter are not a problem, but concerned about chainring compatibility - i know other Shimano motor equipped bikes run Sram 11X group sets, so presuming no problem?

It should not be a problem, i run a NX 11 speed with a bosch motor, so there are no NX chainring available at all for me. The only thing you lose out on is the narrow/wide advantage the NX chainring offers.
