Freaking cool.
As I am a 1 man band I only have a little coal burner. Do have a decent sized gas BBQ for when I invite guests but am thinking of another smoker to add to the collection.

Are you trying to say, in 22 words or less, that "RYAN" is a word which has been banded about in the Brogan house hold, mainly by Mrs B, with much passionate Joy and Glee over the decades ? Also coded into your message is the information that you have a large SODOR name plate on the bedroom door ? ..... I'm just not going any further.

I suppose it is almost the xmas thing. What the hell do you cook on a BBQ for XMAS ??? @Christian ?? (and don't say a shrimp)
I wont say it but it would be un Australian if they didn’t make an appearance.
I’m thinking keeping the Christmas theme alive (pun in-tendon (double pun)) and throwing on some deer.

Oh course we have deer, I saw a couple road kill the other day on the way to the Alpines as they haven’t been hunted through covid. We eat Kangaroo too sometimes but Crocodile is the bomb though.

Following recommendations, I shall try to find some xmas Deer then !!! One almost ran me over last night in the garden when the dog was chasing it ... maybe he had similar ideas .... "I think I'll have some man for xmas ...."

I thought Croc tasted like fishy chicken ! ?? !

Yes shrimps... but they’re king prawns really aren’t they @Christian? Cuz ozzys are masters of the understatement. And then there’s crayfish, Morton bay bugs, mussels, squid marinated in soy sauce beer and crack pepper, whole fresh caught snapper or trout, thick slabs of game fish steaks preferably Hapuka, and uhmm... sausages.

Here’s a delicious but simple recipe @Zimmerframe ...

Grab some pork chops (with bone, fat and skin - none of that trimmed & lean yucky stuff) from the super or butcher and marinade it in the fridge overnight in white vinegar, crushed garlic and crack black pepper - that’s it.

Slow cook them on low-medium heat preferably with real charcoal under the grille (or a bed of those ceramic brickkets if you’ve got a gas bbq). Let the fat slowly dissolve and drip down onto the ember bed to sizzle and bring up some smoke. Presto... you’ve got sweet smoked porky steaks! Yes sweet, not sour...

When I was out in Oz last year I was constantly drooling at the meat selection they had in the Ritchies supermarket I used to go in.
Steaks the size of your head ? I must have looked like a right weirdo :ROFLMAO:
And over here in the UK, what do we get? Steaks that would leave a mouse still hungry ? ?

Shhhhhhh! Not so loud, the ‘deer’ might hear ya. ?? We don’t eat deer, we eat venison. Same reason we don’t eat ‘cows’ - we eat beef.?

Come to think of it, who came up with that carry on anyway??

I can't believe I forgot the key ingredient - GARLIC!

I did find some deer ... but the price ... it was dear !!! :unsure: I thought it was obscene, maybe it had gold fleck in ? I will have a word with the farmer instead ! Bizarrely I did bump into an old boy on the way out for my evening dog walk and explained my search. He said I should just shoot one of the ones in the garden, but that just seems wrong. I know if @BAMBAMODA was here, he'd kill it and cook it all in one go with the subtle warning of "Grenade" ....

Yeah nah that'll do. The way I do it however is to really crush the garlic and mix it in with the vinegar and pepper to make something like a thin slurry and have the pork soaking in that.

Man, looking at that is making me hungry. I can already smell how fragrant the smokey aroma that will drive your neighbours crazy. It'll be a smell quite unlike any other.

How long were you planning to marinade that? Still a long ways before Christmas... ?

In France, the main Christmas meal/family meat ?! up ;) 200 courses, 98 different alcoholic beverages and so on ... is normally on Christmas Eve rather than on Christmas Day - though can often just span over ...

I'm planning on an having an International Christmas so will be starting tonight ! Christmas Eve Eve .. which I'm sure is celebrated somewhere, even if I have to stretch time zones a bit :)

I did that for New Years a while back. 24 hours of celebrating took almost a week to recover from.
24 hours of Christmas dinners Iexpect would take a month to burn off.
