Hello,
Im new to E biking and have just bought a Haibike 5.0 Allmtn, the battery is U/S.
What do you gain by buying a higher ampage output battery?
Better distance?
More power?
Etc

Is it 500 Wh?
Do you have enough range?

Ive not ridden the bike yet, but I imagine that I would never be riding more than 15 miles at one time,
Which would all be off road.
500wh?
Its a yamaha motor set up other than that ive no idea. Not tuned but I will be fitting a tuning kit on it soon

1 battery will easily take you 15 miles. Battery specs Wh (Watt hours) or Ah (Amp hours) are both a measure of storage capacity. Higher will get you better distance.

Get your priorities straight - get to know the very basics of ebiking (including range, assistance levels, battery maintenance etc) instead of thinking of tuning the thing first!

So the higher output on battery equates to longer life span between
each charge, and nothing else?

You have to do your part. This is pedal assist. Read it is easy to get used to a decent Ebike. If you like distance use your gears, do not allways use the maximum assist. I can ride over 4 hrs on my 500 Wh Yamaha.
