if you let a tubeless go flat you can just pump it back up and if your lucky it'll stay pumped up but more than likely will need to put fresh tape and sealant in it, but if you use it enough and it doesn't go flat it should last for a couple of years. I check the tyre pressure before each ride...
whats this 30 - 40 day you talk about, I put 100-150ml in my wheel when I set it up and add about 80-100ml when it wont stay at the pressure I set it before my ride for the length of the days ride, or approx 6 months. and generally do that until I need a new tyre 1-2 years
I have a Cube and their support has been great, I have heard lots of people have them. the Fantic I haven't heard of but it could be an up-and-comer?? Cube has been good for me

99 Bikes have the cube reaction hybrid pro for $2995 ATM its a hardtail but I like mine nice easy trails with no big jumps. love the 85nm bosch motor. the 400 battery I bet approx 40-50kms on it depending where I go but change the tyres
I am in Australia too and the 25kph limit is perfect for my trails on a hardtail but I find at times on foot paths I might need more but I'm not too worried about it personally
they should fit easy warranty jobs up the line, My old bike was a 3-week wait for a wheel truing no parts needed, easy for them in my opinion, but I got my new bike replaced spokes in under 3 days because I bought it from them.
I've got a 2x straight universal lever on my old pedal bike which is great and I'll get one of them on my cube when I get around to getting one in my battery on wheels
You will want to get a ramp to be able to ride your bike up onto the roof rack as it is after a ride I'm sore enough so I can't lift it over a fence let alone onto a roof just my 2 cents
