Totally depends on what you ride, of course. Taller fork will shift the weight back and be better for downhill. Shorter fork will shift the weight forward and be better for a trail rider. Does not matter whether you are going to use 27.5 or 29. Mullet and you will shift the weight back good for going down not so good for going up. Simple.
