My phone will not connect to the Bike

It prompts for PIN i have no PIN in booklet or email or anything. Tryed on a Samsung S5 and Note 8

I went to a Shimano Shop and they said i had to go to the workshop and the guy who fixs it isnt in until 7th October so wondering if i can get a fix online as i dont want to go into store. I have a 4 month old baby im isolation from the corona virus

000000 is the default passkey. If the passkey has been changed (and unknown), AFAIK one will need a PC connection and software to reset it.

Etube Project app or Etube Ride?

Etube Project just crashes with my E8000 since the last app update. You could try ST Unlocker, which is a third party app and costs only a few dollars. I use ST Unlocker instead of Etube Project to change the settings on my bike.

Also you don't need either of the apps to be able to ride the bike.
