Enough air pressure so that when you sit on the saddle in your riding gear (feet on pedals), the shock sags to 30% of the length of the stanchion, or the 30% marker if its a Rockshox shock.

You will find this guide to setting your suspension very useful indeed. It is a Bike Rumour publication and is very well written and with good illustrations.

PS: if pumping up the shock for the first time, it is often essential to follow the manufacturer's recommended procedure. This may involve pumping up in stages and compressing the shock through 30-50% of its travel. This is to ensure that the negative and positive chambers are properly pressurised.
