The bike is booked in with Canyon for them to sort this out and no riding for a few weeks, which is a shame. Thanks for all the comments everyone. Hopefully, this gets figured out and I'll share what it was (if its fixed).

I’m going to take the bike back to Canyon. 4th ride and despite setting up the gears well, it’s still jumps under load. They need to sort this out.

Well I’ve gone through the screws and indexing. It’s much better, but I’m still getting the chain to jump in the highest gear under load and it doesn’t sound great in the lowest gear. I’m now trying to figure out what mech hanger I need to replace. Any ideas?

Sounds like a quite hard to spot issue. I think I’ve resolved my issue and likely down to a stretched cable and indexing needed. Going for a ride and will post the result here.
