Using a Garmin Edge 530 to navigate and a Fenix 6 watch as a heart monitor at the same time?

Is it possible to follow a route using your Edge 530 with Strava and once complete have ride data that includes heart rate info gathered from your Garmin watch?

Yes.
Heart rate data should all be visible on the edge in real time and all recorded on the connect app once the device has uploaded at the end of your ride. I normally use a hrm strap but if I don't want to wear it I can set my watch to send hr data to the edge, it doesn't send it by default.

(I don't actually have the fenix watch but it is a garmin watch, also I have the edge 1030 not the 530, but I can't see it being any different)

I'm finding how to videos mentioning "Broadcast Heart rate" is the function you are referring to and does it need manually selected before every ride?
 
The function is selected, from the menu which is activated by a long press of the upper left button at your watch (it has a heart icon). Select it with the upper right key. Then press this key again to start the broadcast function (heart icon turns red). You have to do this every time before a ride.
