I still haven't decided what breaks to get. These are the options:
1. IIIPro IV4R - 90€
2. Shimano M7120 - 155€
3. Magura MT5 - 120€
I excluded the IIIPro because I don't know if I can trust them with the warranty should I need it. Ultimately, I decided to go with Shimano because I read that Magura levers are prone to failure.

I thought about this, and I think you are right. However, I believe that the saddle choice is very subjective because it depends a lot on the rider's anatomy. It wouldn't make much sense to buy an expensive saddle only to discover that it's not right for you. So, I think the best thing is to get a professional saddle fit, but before doing that, I want to have a reference point, like I said, this will be my first mtb in years. I think the cheap Chinese saddle will be a decent reference point. I will use it for a few months to figure out what I like and what I don't like, before upgrading to something better. It has a lot of positive reviews, so maybe I'll get lucky and not have to change it.
For the pedals: I really like how those look, especially the color. I decided to risk it, hopefully, they don't suck completely.
Finally, I ditched the Chinese grips and went with something more expensive, choosing mainly based on looks, I'm not gonna lie.
I'm not sure if I should take advantage of the current deals to get a dropper post as well. The frame came with the Exa i900. I don't know if it's any good but, I suspect it's not great.
