How do I safely wash my giant eMTB when it gets all muddy?

The hose is the enemy so be very careful.
Allow to dry and brush off mud, or use a damp sponge, waxes and water displacements.
Dry clean if you can with automotive products.
The definition of dryclean is, any medium other than water.Water is the enemy of electric parts, such as the circuit boards in bikes.
Check the bottom plastic cover has the drain holes clear, else remove and clean it.

I'm using a hose and Bike cleaner for all of the five giant e-Bikes I've owned and didn't have any water ingress problems with any other than the 2019 Trance.

I wouldn't recommend a high pressure washer tough, but a garden hose isn't the enemy.

95% of the dirt can be brushed off if you let it dry.
I just clean the pivots and stanchions then brush off the crap later
