No you are not wrong, but its not the cadence that has to go up. Its the electrical power. That is why i mentioned before that most motors actually consume anywhere from 500W to 750W at peak, resulting in ~70 to ~110Nm at the cranks.

The percentage rating means the amplification of your own input. So if it is set for example at 200%, and you apply a force of lets say 30Nm on the cranks, the motor will output 60Nm. If it is set at 90% and you apply 30Nm, the motor will output 27Nm.

Ive had both of my Shimano batteries die while there was nothing obviously wrong with it. They just bricked themselves. Ive got them somewhat working again by bypassing the battery BMS, but its far from perfect. My Shimano E8000 has had its bearings replaced and now needs a new clutch mechanism...
I dont bother with switching out chains to save on cassette wear. Chains cost a lot too you know.

FWIW, you can buy the sprockets on Ali too. Just search for "M8100 sprocket" and you will get some hits. Ive ordered from 0086bike Store and Chaser Store in the past without problems.
The small sprockets are interchangeable between M6100, M7100 and M8100.
The H03A and H03C are identical to the D03S, with the exception of a cooling fin on top. For certain calipers you can use both. For example the BR-MT520 works with D03S, but will also work with H03A / H03C (even though shimano does not officially lists them as supported).
