I have Shimano MTB shoes and I bought a cheap pair of Ridge mtb shoes out of Halfords that I wear if my Shimano shoes are wet. I think people wear trainers etc underneath them as well.
I used to avoid climbs but now I look for them. I even managed to get a crown on Strava at the weekend (e-bike category).Heart rate was upto 176bpm but I actually enjoyed it.
I have the same bike and I’m well pleased with it. I ride the same surfaces you plan to and it’s more than capable. I may upgrade the forks, add a dropper seat post and go tubeless at some point but I’m in no rush as it handles everything I have done no bother for now.
