Here is what a sample ride looks like in Strava on my set up.

Here's how it works:
Avinox is linked to Strava account as shown in a previous post.
Avinox has sim card and cloud sync enabled. (not sure this is required if you let the Avinox phone app grab the data from the bike)
In Strava app on Apple watch, start emtb ride.
After the ride on the watch, "Finish" and save the activity.
2 versions of the same ride will appear in Strava, one from the Strava watch app and one from Avinox.
The Strava version has heart rate, GPS data and some other stuff from the Apple watch.
The Avinox version has power, cadence, watts and other Avinox stuff.
Once I get home I use GOTOES to merge the 2 versions into one master activity, then delete the original 2. GOTOES is linked to my Strava account so it pulls directly from Strava so it's very easy, takes less than 1 minute to do the merge process.
It seems clumsy (and it kinda is) but once your accounts are linked the only work you do is hit one button on your Apple watch when you start your ride, one button on the watch when you end your ride, then spend less than a minute at some point later to merge the 2 activities.
