I’m aware there’s a spreadsheet with all the configuration options for the Fuel+, including some secret squirrel combos…does anyone have it by any chance?

It is on their website. On Trek Fuel+ page, look for tab named "Service" on bottom of the page. There is link with name "Guide - Fuel Gen 7 / Fuel+ Gen 2 Configuration Menu".

That spreadsheet gives me a headache LOL sorta.
Quick interpretation please-
The shock strokes are all either 60 or 65 mm
Standard shock stroke with EX and MX are 60 Float, and the LX which is 65 and is a DHX2 coil.
Question 1- are all of those 65's on the chart assuming 205x65 coil DHX2??
Question 2-and are the 60's either Float 2 OR DHX coil @ 205x 60?

You can also increase the Float X travel from 60mm to 65mm by removing the travel spacer from the shock. It is mentioned in the service manual. I'm not sure if similar is possible with DHX.
Shock options configurable for Fuel+ in my country are:
60mm: Rockshox Super Deluxe, Fox Float X or DHX coil
65mm: Fox Float X (spacer removed), DHX2 coil or Float X2
