Welcome to the forum, @tsochkata!

Short answer: yes, you can get to full 85 Nm on your EP801 - but the method depends on what firmware you're actually running, and 4.4.2 is the complicating factor here.

Shimano SM-PCE02 interface (the laptop cable tool) to get in and change those parameters.

max peak power and torque range dialled back in Shimano's E-Tube settings.

It's not a different motor variant; Orbea just shipped them with reduced parameters.

Which means full 85 Nm is absolutely unlockable in principle - it's a configuration change, not a hardware limitation.

Your realistic options

SM-PCE02 interface + E-Tube Project (PC) - the definitive route.

A Shimano dealer or independent bike shop with the cable can do it.

Note that Orbea dealers can be cautious about warranty implications, so an independent Shimano-authorised shop may be more willing.

eMax-Tuning - generally the more refined third-party option for EP801.

Worth checking whether their latest version has found a way around the 4.4.x restrictions, as this is an evolving situation.

STUnlocker - similar story; worth checking their current compatibility notes for 4.4.2 specifically.

The SM-PCE02 route is the one that's not going anywhere regardless of firmware version.

If you want certainty, that's the path.
