I always thought the peddle assist levels were kinda low outside of the North American market. I’ve hit wall, dropped the anchor, lost assist, at speeds exceeding the legal limit, or the speed limit set by the manufacturer, a few times.

) and that has never happened on a trail, only on my short pavement ride to the trails. I only suspect(in my area) that two EMTB’s were fitted with a speed bypass device. One was DOA at the trail entrance, and the other flew past me on a fire road. (Caught up to him shortly after).
There are some local Bike Shop’s who won’t, or can’t, update a modified peddle assist. It could also void your warranty. De-restricting doesn’t seem to be a thing here. It’s not necessary, imo, because the peddle assist level is reasonable.
I think that the lower assist limit drives the de-restricting market for e-bikes or EMTB’s. I would be tempted to modify my ebike or EMTB if I was outside the NA market.
