I’ve been using Komoot for years to plan both hiking and eMTB rides, but it often sends me onto impassable tracks, sometimes completely overgrown with dense vegetation, or onto private or closed roads that are clearly not usable. As a result, I have to go back and take long detours. This happens whether I select “gravel” or “MTB” mode.

What apps do you use for planning your routes?

If you're riding MTB trails then Trailforks (app/website) is pretty good as users can submit reports on trail condition and if there are any issues (overgrown, fallen trees etc). For example:

Not sure it would be much use for general riding, although the paid version does have route planning.

If you use a Heatmap overlay (or the strava one) you can see which trails are "no-go" as well as other "good" trails not shown on the map

Trailforks is pretty good. I don't use it for turn-by-turn, but when I get lost, I whip it out to get my bearings. It will download your entire region, so you don't need connectivity. Second is Gaia. It's not as good for MTB trails, but when you're really in need of finding out exactly where you are, it's a little better.

More than finding my bearings I need to plan my itinerary. I like to ride with a destination in my mind. Possibly using an hard, but doable, gravel or MTB track.

Are Trailforks and Gaia good for that?

I tried Komoot in north Wales last year - I had to stop myself from self from cycling off a cliff after an hours use
(we covered the same few k's about 5 times - it made stuff up)
can you not get your hands on a Garmin device?
that will take route files GPX etc.
either your routes or other peoples

Downloading GPX files onto Komoot is possible. The real problem is creating new routes between two points, let’s say A and B, that are both 1) fun and 2) safe. Komoot suggests the track, just like Google Maps does, but it often does it poorly, leading you through areas that are quite unsafe or even closed to traffic.

(I am experimenting with Trailforks...)
