Fitting 7 or 8 speed cassette onto 11 speed

From looking online, the sram nx hub I have will accept shimano hyper glide cassette, but from all the comments above sounds very much like you generally don't ideally mix and match between sram/shimano re shifter, derailleur and cassette to 'guarantee' compatibility etc, cos have to say I'm no expert at setting gears up and always seem to make a mess of it.... And then live with it.... After getting it near enough! Cheers

Thanks for all the info folks, I'm on holiday just now but going to get into the gears when back. Shame sram 11 speed cassettes seem so expensive compared to shimano, otherwise I think it'd be no-brainer to just replace cassette and chain and that's that.
Could conceivably shift the cogs around and set highs and lows on derailleur to only use maybe 7 gears.
But still the bodger in me is tempted (as I have most of the bits, got 7 or 8 speed shifter and derailleur in spares) to change over to shimano and attempt to make 7 or 8 speed work.
