I believe it's unchanged other than slight colour differences on the frame since the introduction of the smart system in 2022, so unless you want a 24 model find the cheapest one you can From 22 onwards.
I also have the sqlab 30x bars in 16deg and rate them highly, I would highly recommend doing the wrist angle test first to see if either the 12 or 16 will suit your resting wrist position, or if the standard 7-9deg on most other bars actually fits your better.

I'm not sure of this, I have a 22 cube which i have not done a system update on until recently. Before doing the update the walk assist worked in the same way as @arTNC described, full power at the push of the button with little to no delay.

I believe the stock tape isn't tubules ready and will need replacing with proper tubeless tape.
Any of the big brands should work equally as well, just get the right width.

Not overly tight, maybe 4-5nm, use good quality thread lock and they shouldn't come loose.
Like you say, you don't want to overtighten them as the studs are bonded directly to the carbon frame and if that breaks it could be expensive to fix.
Seems this is an issue with no real solution.
Even with the membrane Yamaha uses, you'd expect the motor to dry out over the summer months but the damage could already have been done?
