I’m trying to figure out what mineral oil to use. The updated levers M9220 use a new low viscosity oil. mm5 weight and state it must be used. The M7 use mm11 that is much thicker. I’m definitely leaning towards the mm5 but wondering if it will be an issue with the Magura calibers.

I would use the old fluid. Although the new levers are designed for the thinner fluid, l think the new stuff will be too thin for the calipers and they will start leaking.
On a shigura system I had, I used the older fluid without any problems, but that was with older servo wave xt levers.
 
Been running Shirgura brakes (MT7 Calipers/Saint Levers) for over 7 years and the MT7 Calipers don't play nice unless you use the Royal Blood mineral oil.
 
I decided to go with the new LV fluid from Shimano. Besides crashing and dying, the worst thing could happen, is ruining the Magura calipers. If that happens, I’ll just just buy the Shimano ones.
The LV fluid is $$$$ $75 for 500 ml
