What size do you recommend for 5'-7" tall with inseam of 29". I was thinking between M and L size.

As a guide, I go on the web page of Specialized Bikes as they have a nice calculation method to find out your size, relative to the bikes they manufacture. For example, my size is S3 so I will check the geometry measurements of their bikes in the size S3, and then compare those numbers to those of the bikes you plan on buying.
I also made myself a worksheet to easily compare many bikes side-by-side. Attached below.

Definitely go for medium at your height, I’m 6’0” on a Large.

the frame feels big because of its long and slack geo
im 182 cm on a large and if feels big for me. bot to much but i used a short stem and riser bars
