I know it might sound weird, but since I've always had a good 60% of remaining battery after each ride, I was wondering if it was possible to tweak the battery to have less capacity and hopefully less weight.

My bike is a levo 19 equipped with a 500 Wh battery and the actual weight is 20.9 kg

The battery does indeed get heavier when it is charged, but in the case of an ebike battery, it's probably in the order of picograms. So I wouldn't worry.
See:

The only way to reduce the weight is to open up your battery and remove some of the cells, which would screw up a whole ton of stuff.

I believe that someone has made an adapter kit to use the SL's external battery on the Levo, but I don't know if that would work by itself with the main battery removed.

These bikes use different voltage. 48 v for SL and 36 v for Levo ?

Turn up your assistance and ride your routes faster and burn more battery....climb more hills ?
