How do you get the Gen 4 Levo to display the AXS gear number on the screen? I have the screen set to display the gear but, it just displays a horizontal line instead of the gear number.

You were correct that that AXS derailleur was not paired with the bikes TCU however, your procedure on how to pair the two were based on a Gen 3 Levo's remote control and not a Gen 4 Levo's remote control.Welcome to the forums, @Gila Man. First, make sure your MasterMind TCU is on firmware 31.C.0 or higher, and that your AXS derailleur is also on the latest firmware. Update both through Mission Control and the AXS app before you do anything else.
Once that's sorted, here's the pairing sequence: Turn the bike on, then enter the setup menu on the MasterMind display by holding the +/- buttons on the remote simultaneously. Navigate to Sensors / Pair ANT / Shifting, confirm "Shifting" with the F1 button, then press the AXS rear derailleur button once to initiate pairing. Confirm the pairing is showing on the MasterMind display.
After that, open Mission Control, connect to the bike, go to TUNE and CUSTOMIZE DISPLAY, and create an AXS display field.
One common gotcha: if the pairing keeps failing, remove the MasterMind TCU from the frame, gently pull some cable, and hold it as close as possible to the rear derailleur during the pairing process.
The ANT+ signal is short-range and the carbon frame doesn't help matters. Run through that and your gear number should appear. If it's still stubbornly showing a dash after a successful pairing, a full power cycle of both the bike and the derailleur usually clears it.
