Can you change a folding bike headstock to a normal mtb Headstock ?

Just answered my own question, lol.
I have a 20inch Fat ebike that I have modified/upgraded, don't use it as a folding bike any more.
I found a quill stem and a 210mm Riser.
Anyone know of any bigger risers?
