Im having doubts about the products Im looking at when finding parts ..
The barkes aare Shiano Saint...but do they have a part number...?( Saint, New Saint, Deoire, XT, M-810/M820 blah blah..its a minefield!!)

BR-M820 is the caliper part number. Check here for pads and other details BR-M820

The model number should be on the caliper body itself I think? It is on my XT calipers. Check the Line-up chart here for all your part numbers: 2020-2021 SHIMANO Product Information Web. The Compatibility guide is useful when changing parts.
