@Tubby G It looks like you're now well educated. It all comes down to the native rotor size for the fork. The 34 takes a 160 with no adapter, the 36 minimum is 180. You run into the same issue on the rear depending on what frame you run. Now you know.
I've always been a fan of the custom wheel route. I'm running Light Bicycle Recon Pro EN932 laced to Hope Pro 4 Hubs and have a similar setup with I9 Hydra's that I ran on my Pivot. There are no brand names that can match that type of value. It doesn't have to be LB either, similar companies...
It's super simple. Release the air from your shock and mount the bike in your stand (or you could even do it on the ground. The rear triangle is light enough that you can support it and remove the shock. You're overthinking it.
