The Giant has a reliable and well liked motor, but their frames can lack high end finishes and details.
On the other hand, SC make possibly the best quality frames, but feedback on the Fazua has been pretty mixed...

Regarding the torque: I believe it is 50Nm, as above my wrench tops out at 30... That said, the original OEM cranks were a nightmare to get off, the non-drive side in particular required me to stand on the wrench+ push my weight down by pressing off the ceiling!
I am on my 4th set over 3 years and 2 bikes. If you really smash them into a rock you will slightly bend them, you will be able to finish the ride.
I much prefer to have the crank bear the brunt of such impacts than the motor.

I'm on 500lbs spring at 76kg, but going to swap to a 475 this week and try to lose a few kg (I'm usually closer to 72kg weight). There is a giant reign coil weight thread if you search, most people were 80kg and had 500lbs.
Personally, I just bought a standard 205*62.5, I will say even with a heavier than ideal spring I am beating all my times up and down segments with a coil shock, no pedal strikes (due to heavy spring).
I really wish we could do custom shocks or even custom rocker, but that doesn't seem...

I have the stock Zeb RC forks on the bike, but changed the travel to 180mm. Had to do some weird air bleeding in the lowers to get full travel, but they currently feel very good.
The shock comes with a free service next year, I will probably send the fork and get a custom compression circuit...

Update on this: my local bike shop told me my EX511 is very tired, it is just under 2 years old and has been treated horribly (bike park days here and there and big-ish jumps constantly). That said still no dents, just very hard to true straight.

What freehub and number of gears?
Generally speaking, SRAM XO1 tends to be a good buy (especially in 11s), it has the durability of XX1 (significantly longer than GX), so in terms of dollars per miles it is on par with GX, but much lighter.
Also, it is a good idea to change chains every year...
