If I were to buy a new set of wheels for my e-mtb... which hubs are good (or the best...) for e-bike use and which ones are better left in the shops?

I used a Feedback Ultralight stand for many years and was perfectly happy with it. Untill I bought an e-mtb... :)
The Feedback won't break, but it's not stable with that kind of load. So I sold it and bought a Parktool PRS-25 instead and that really is a stable workstand, even with 23kg's in...
On this pic you can see that the caliper has an angle compared to the disc mounts on the fork. So if you don't use the conical washers the bolts will take a "bending" force when you tighten them.
You do need those conical washers on the outside of the Shimano adapter. If you don't use them the force on the bolts will not be straight (don't know how to describe this better, English isn't my native language ;)).

One thing to consider if you should want to go a little less wide is the ground clearance. If your pedals are already hitting the ground often I would certainly keep the 2.8 tires and not go to smaller sizes.
Apart from that it's personal preference which tire size suits you best.

What I do when mounting a 6-bolt rotor on a hub is this:
- screw in all the bolts, but don't tighten them.
- then "turn the disc clockwise", to take up any possible play, and while holding the disc this way tighten the bolts in a cross pattern...
