    375 'watts' (presumably you mean watt/hours) is just under 32Ah at 12VDC, you'll lose a bit as no system is 100% efficient so I'd estimate you'll use about 40Ah from your car battery so roughly half it's capacity.

    The top flange on a top cap is usually flat not wedge shaped, I'm guessing it is that shape because of the shape of the top of the stem, I assume the thick side faces forward? If so the flat mating surface on top is recessed and you'll need a suitable spacer (not one of the wide ones) underneath...

The only issue is the 29mm internal wheels which Orbea say a min 47mm tyre is recommended. I think I'd be ok to go a bit smaller but suspect 40-622 might be a step to far...

    The Shimano motor in my Orbea Urrun doesn't rattle. I haven't had it long enough to comment on reliability but it rides beautifully. WRT frame materials, I'd stick with aluminium, the weight saving from a carbon frame is pretty irrelevant on an eMTB and alloy will save you a few quid.
