I am constantly shifting through 2-3 sprockets on my GX Eagle cassette.
An 11-46t cassette is probably enough range for my e-bike. I rode an 11-42t analogue bike for a while and didn't want for a bigger sprocket very often.
A Sunrace 10 speed 11-46t weighs a few 10g less...

Recently had a motor replaced on my Cube Reaction Hybrid 500, and the crank arm non-drive side is ever so slightly rubbing on the plastic motor case. On my bike, there was never much clearance. A mm or two at most.
