Yes. The Bosch one might be a little better quality than the Trek. I used the trek housing and bonded the Bosch slimline sensor in place.

I’ve used quality shims in seatposts. But unsure if I would trust them in a bar situation… Don’t use plastic or silicone!!! Change of stem is a cheap option, does a friend have one with a 31.8mm clamp you can borrow to try? If not some shims like this are available online:

Leave the blue rubber in place. At the pin end, prise the plastic cover up with a Stanley blade. It then exposes both pins. Push in the little barb and the pins will slide out together. I did this at the weekend when I fitted a new sensor.

Bosch Smart System with 750wh is likely to only be on the Higher end Carbon bikes for 2022. Because the 20% larger battery won’t fit current alloy or size small frames, It wouldn’t be cost effective for them to have a new alloy frame yet for the lower end Rail models. Maybe 2023/24?
