I would use the old fluid. Although the new levers are designed for the thinner fluid, l think the new stuff will be too thin for the calipers and they will start leaking. On a shigura system I had, I used the older fluid without any problems, but that was with older servo wave xt levers.

I would use two chains as well so they match the cassette in use.
