I think I would have just cleaned the second chain instead of replacing it. How about this strategy? Start with a new chain and run it until 0.5 stretch, then replace with a new chain and run until 0.75 stretch, and then replace with first chain and run it until 0.75, and then replace everything?

It’s a pretty rare thing, I don’t think I’ve broken one in about 20 years. Doesn’t seem worth the effort to stock up on supplies and learn how to do, though I’m sure some will beg to differ. I’d just let the shop handle it.
I don't know that a motor error hurts the motor. Ask Spec. Personally I don't clean my chain that often, but I do like the Park chain cleaner. I use Simple Green with some water.
Why does it have to sit at the bike shop for 3-4 weeks unti they can get to it. Can't you get it on the books and bring it in the day before they're ready to work on it?
I don't know. I took a 5-week camping trip last year with my old acoustic bike on a hitch rack and I hated it getting rained on. I plan to do more traveling with the ebike and thought about getting a motorcycle cover for it.
