My Altitude has 35mm Raceface rims albeit in 650b. The factory size was 2.5" Maxxis and now using 2.6" Vittoria (which measure 2.5" mounted anyway). Why would you want to go wider in the tyre - or narrower for that matter? I find the 2.5" to be pretty good for everything I do and the bonus is they cost $100nzd, compared to anything 2.8 or wider which are twice the price. The 2.5" is also a nice fit on that rim allowing me to use pressures of 21 and 19psi with tubes and no problems. I think a 2" tyre will be too small on the 35mm rim, and you'd be more likely to damage the rim if you tend to ride fast rocky or rooted sections, especially on the back. As for a 3" tyre, you're almost into Fat bike territory...:D
